How do sweet potatoes benefit the skin?

The old saying goes, "you are what you eat" and it is so true. Our skin is a reflection of the food we consume and the quality of skin care we use.

There are many foods that keep your skin healthy, strong and attractive, but in the spirit of the season, I'll talk about sweet potatoes.

Sweet potatoes are a beta carotene rich food. Beta carotene functions as provitamin A, which means it can be converted into vitamin A in your body. Provitamin A carotenoids are potent antioxidants. They crush the free radicals that break down collagen (your skin’s support structure) and contribute to fine lines and saggy skin. They also lessen skin’s sensitivity to the sun, providing some natural protection against sun-induced redness and pigmentation.

This is a fine example of the power of food from the inside out.

One 1/2-cup serving (100 grams) of baked sweet potato contains enough beta-carotene to provide nearly four times the RDI of vitamin A. That's a power packed 1/2 cup to me!

To bring out the natural sweetness of sweet potatoes, roast in 350 degree oven until soft. Sprinkle with cinnamon and some butter or coconut oil and you have yourself a delicious and healthy dish.
